Avocado in my pudding? Chickpeas in my cookie dough?
Here’s three classic dessert made over to be gluten-free, dairy-free and loaded with protein- and still taste amazing. What’s even better is there’s absolutely no baking necessary!
“Cookie Dough” Pudding
SERVES: 1-2
PREP TIME: 2-3 minutes
COOK TIME: none!
Ingredients:
- 1/2 cup vanilla protein powder
- 1/4 cup chickpeas, rinsed and drained
- 1/2 dairy-free milk
- 2 Tbsp dairy-free chocolate chips
Instructions:
1. Set chocolate chips aside. Combine remaining ingredients in a bowl and mix with hand blender for several minutes, until mixture has thickened.
2. Add in the chocolate chips and stir to combine.
Chocolate Banana Pudding
SERVES: 1-2
PREP TIME: 3-5 minutes
COOK TIME: none!
Ingredients:
- 1 ripe avocado
- 1 medium banana (the riper, the sweeter the pudding will taste)
- 3-4 Tbsp unsweetened cocoa powder
- 1/2 tsp vanilla extract
- 3/4 scoop chocolate protein powder
Instructions:
1. Combine the avocado and banana in a food processor and blend until smooth, scraping down the sides as needed.
2. Add the cocoa powder, vanilla and protein. Process again until combined.
*Keep refrigerated until ready to serve. Eat within 2-3 days of making.
No-Bake Peanut Butter Cookies
SERVES: 8
PREP TIME: 3-5 minutes
COOK TIME: none!
Ingredients:
- 1 cup natural peanut butter (opt for other nut butters to suite your taste)
- 1 cup quick-cooking rolled oats
- 1/2 cup organic raw honey
- 1 cup chocolate protein powder
Instructions:
1. Combine ingredients in a medium bowl, mixing well.
2. Roll 1 Tbsp of mixture into ball. (Recipe will yield approximately 24 balls)
3. Flatten each ball slightly into the shape of a cookie. No baking necessary!
